Creamy Tortellini Soup with Spinach



Calling every Mom who needs an easy meal for dinner ready under 30 minutes! This one's for you.


I forget about making simple recipes like this until I make it and am reminded it needs to be in our meal rotation about every other week. Problem is we don't really have a meal rotation. Do you? I love to make new recipes often but this week I was recalled making a similar soup months ago and knew it was time to try it again this week.


This season life is very full and time isn't exactly on our side. I need to feed my family well and yet not stress about it. I bet you feel the same way most nights too. It's my hope that this recipe will help you do just that!


Simple one pot wonder meals are some of my favorites. There's less cleanup and generally speaking, less work. Let's get on to it. Here's what I made tonight.


Ingredients You'll Need.

  • drizzle of EVOO

  • 1 tablespoon butter

  • 1 onion, chopped

  • 5 garlic cloves, minced

  • 6 ounces tomato paste

  • 5 cups water

  • 1 heaping tablespoon of vegetable better than bouillon

  • 28 ounces diced tomatoes

  • 1 teaspoon thyme

  • 1 teaspoon rosemary

  • 2 teaspoons basil

  • 20 ounces tortellini

  • 1 1/2 cups half and half

  • 1 tablespoon flour

  • 4 cups spinach

  • 1 1/2 teaspoons kosher salt

To make the soup:

  1. Heat a large dutch oven then place your oil and butter in the pot. Next add your onion and garlic and allow to soften then add in the tomato paste, cooking for about 2 minutes.

  2. At this point add in your broth or water and better than bouillon, diced tomatoes and spices. Bring everything to a boil and then simmer for 10 minutes.

  3. Place the tortellini in the soup and allow to cook for 5 minutes.

  4. Mix the flour and half and half together then pour into the soup, stirring to combine. Now add in your spinach and season with salt.


Make sure everything is heated through and serve immediately! You'd never freeze this soup but it's not problem, you'll eat it up fast enough!
