Pancakes in a Jar

What do my kids ask for almost every morning? Pancakes. While I’ll love to tell you their dreams become a reality, most mornings we’re just trying to get out the door and eggs and toast are our standby. I'm so glad it's Christmas break because it means less hustling, more pancakes.

I love making a big batch of these pancakes because they’re great not only as gifts during the holidays, but my kids love them too. Some days I do go for a big batch with butter from another recipe I really like, but on other days I'm glad to have this easy one on hand.

Ingredients You’ll Need:

  • 8 quart size mason jars

  • 1 12 oz container dry buttermilk

  • 8 cups all purpose flour

  • ½ cup baking powder

  • 1 ½ teaspoons kosher salt

  • 1 ¼ cups sugar

  • 1 teaspoon vanilla extract

  • 1 cup water

  1. Combine the buttermilk through sugar in a large bowl and then distribute 1 ½ cups of mix into each jar.

  2. When you’re ready to make pancakes simply add the vanilla and water to the jar and shake well to incorporate.

  3. Pour desired amount of batter on a buttered skillet and flip once the pancakes begin to bubble, about 2-3 minutes per side. Each jar yields 12-14 pancakes. Enjoy!
